This infographic is a snapshot of the Empanada Valluna today, the subject of study is an evolving, ever-changing being, pressured by the environmental factors, social migrations, and globalisation. Its a research and study of the collective identity of the people from the Cauca Valley, Colombia, through the genealogy of one of its most representative traditional dish.
Traditional food as case study on academic research across fields is being used more every day. Humans want to find their identity, who they are, where they come from, and what makes them what they are. Genealogy presents itself as a set of methods to trace back your past ancestors and their journeys to the present. By using scientific methods, this research identifies the “ADN” of the modern Empanada Valluna, it collects data of recipes from different sources and consolidates the essential ingredients and cooking techniques that make possible the empanada of today.
