HOGAO

Hogao is a homemade savoury sauce essential in Colombian gastronomy; it is present in most of traditional dishes or as a side sauce. The hogao is made by sautéing over low heat Chinese onion, tomatoes, crushed garlic, cumin, salt, pepper, and achiote until the consistency is homogeneous. It was introduced in its original form by the Spaniards although it has also been compared to some sauces from West Africa.
